3 lbs. elk steak
2 Tbsp. oil
½ cup chopped onion
¾ cup ketchup
1/3 cup vinegar
¾ cup water
1 Tbsp. brown sugar
1 Tbsp. dry mustard
1 Tbsp. Worcestershire sauce
½ tsp. salt
1/8 tsp. pepper
Heat oven to 350 degrees. Cut steak into 10 equal portions. Pour oil into skillet. Brown each piece of steak on both sides. Transfer steaks to baking dish. Add onions to oil in skillet (add more oil if needed) and brown lightly. Add rest of ingredients to make a sauce. Pour sauce over steaks in baking dish, cover. Bake 60 minutes or until meat is fork tender.
